Italian truffles: the goodness of autumn

Truffle season has been very fruitful this year experts expected a bumper crop , thanks to the abundant summer rains , and it was! Because of its scarcity in some years the price for the white truffle , the most valuable , has come to touch even € 4,500.00 ( $ 6,082.00 ) per kilo !

In Italy and France the cultivation of truffles is still remaining an experimental practice , but the bulk quality is no doubt as good as the wild truffles . Till the end of the World War II, in Italy were used specially trained pigs for the search of the precious tubers: the problem of this rummy  method is that the pig is fond of truffles! so the truffle hunters had to hold them to avoid him from eating truffles and destroy plants, roots and ground . Nowadays, it has come a law that ban the use of pigs, instead we use trained dogs.

This tuber has for centuries sparked the imagination of writers and gourmets because of its rarity and its outlandish taste. Due to its versatility, it can be used in many ways in the kitchen : with bread, pasta, meat, cakes, eggs, vegetarian soups or desserts. Have a pieces of toasted bread or cheese to taste its full strength! the strength of the Mother Earth is enclosed in it.
