Christmas in Italy: Cappelletti time of the year

Christmas is coming. In Umbria this means to prepare the cappelletti pasta.
There is no Christmas without capelletti in this region of Italy.
Cappelletti (little hats) are small meat filled pasta “hats”, similar to Tortellini.
Yesterday I had the privilege to assist this Italian family. Kids, grandparents, aunt and uncle all came together. Pasta is rolled out several times. Little round pieces are cut out with glasses, then filled with meat, closed and switched (this is the most difficult part).
We made 600 cappelletti yesterday. And we were already tired. Until someone told us about an old lady living nearby who has already prepared 3500 cappelletti…..
