    About Pesto alla Trapanese

    The pesto to Trapani, in local slang called "agghiata trapanisa" or "agliata Trapani", is a recipe typical of western Sicily. Trapanese pesto is an old recipe that originated in the ports of Trapani.

    In Trapani docked lots of Genoese ships from the East and of course the sailors taught the Genoese pesto to the Sicilians. Locals modified the recipe of Genoese pesto adding the ingredients typical of their territory. They added almonds and fresh tomatoes.

    As tradition, all the ingredients for pesto should be crushed in a mortar or in a mixer. Trapanese pesto is great if used for pasta served hot or cold.
