Hungry for Pasta with Amatriciana sauce ?

Italian nonna cooking matriciana sauce

Do you know Amatriciana sauce ? It is a spicy tomato sauce named after the Italian town of Amatrice in the Lazio region.

If you don’t want to cook as much as the nonna on the picture (she is preparing for a “festa” in a small Italian town) here is the recipe for 4-6 people:

Ingredients:

  • 1 28 -ounce can whole peeled tomatoes
  • 6 tablespoons extra-virgin olive oil (2 for cooking 4 for later)
  • 1/4 pound guanciale or pancetta, diced
  • 1 chopped garlic clove
  • 1 teaspoon peperoncino
  • Salt and freshly ground pepper
  • 1 pound bucatini or spaghetti, cooked until al dente
  • 1 tablespoon finely chopped fresh parsley (large leaves if you get it)
  • Grated parmesan cheese for serving

 

  1. Cut the canned tomatoes
  2. Heat the olive oil over medium-high heat in a large skillet.
  3. Add the guanciale and saute until golden brown.
  4. Add the garlic and red pepper flakes and saute 1 minute.
  5. Add the tomatoes and salt and pepper to taste. Reduce the heat to medium low and stir well. Cook, uncovered, 15 minutes. At the end add the basil.
  6. Toss with the al dente pasta and sprinkle parsley and parmesan and olive oil on top.
