    Nonna's Wild boar Straccetti: A different lasagna recipe 


    Ingredients for 2/4 people:

    500gr Straccetti

    180gr wild boar ragu'

    2 mozzarella cheese

    0,75lt. Fresh milk

    100gr Grated parmesan

    50gr butter

    50gr flour

    1 shallot

    1 clove of garlic

    1 carrot

    1 cellery

    1 chili pepper

    Extra-Virgin Olive Oil

    Pure Trapani Sea-salt

    Black pepper



    1 - first put on fire min.4 liters of cold water. A part of it take two - 1 lt. size Casserole: heat the milk in the first one, and melt butter and flour in the other one, keep cooking at low fire till the milk is boiling; mix together and leave at low fire about 5 minutes. Take off from fire and keep aside.

    2 - Cut the mozzarella cheese in small cubes chops.

    3 - Wash,peal and chop:shallot,carrot and cellery; take a skipp pan, add 3 table spoon of olive oil, 1 smashed garlic clove and the chopped vegies,stir fry about 5 min.at low fire (Italian soffritto), take off from fire ,wait for 30 seconds and add the wild boar ragu'.

    4 – Add 1 and a half table spoon of salt while the water is boiling. Add Straccetti into the salty boiling water and drain them 1 or 2 minutes before they are completely cooked. Further, cool them down in a bowl with fresh water, drain again and add 1 table spoon of olive oil (that prevent that the straccetti stiks together).

    5 - Take all the ingredients and start to create the lasagne in a buttered pirophile as following: start with the ragù sauce, cream and olive oil, then lay a carpet of straccetti, continue with ragù sauce, cream and mozzarella; make 3 more layers and finish with a bit of cream and mozzarella cheese on top. Add some pepper and a bit of grated parmigiano cheese.

    6 - Bake the lasagna-straccetti in a warmed oven for about 20 minutes at 180°C
