The sauce is the essential ingredient and the milestone of Mediterranean cuisine. The original "sugo" refers to tomato sauce and is used to accompany pasta. It is stillthe most common ingredient on which a lot of other sauces are based on. The sauce is not tied to starches, acquires consistency from the pulp of the tomato.
