Black ink truffle touch:
Ingredients:
500gr black ink tagliatelle
400gr fresh zuchini
300re fresh prawns
parsely
2 cloves of garlic
1 chili pepper
Extra Virgin Olive Oil
white wine
salt
pepper
preparation:
1- First put on fire min.5 liters of cold water. Apart of it, cut the zuchini in small cube chops.
2- Take a skippin pan, and put 3 table spoon of olive oil, 1 clove of smashed garlic, half dry chili pepper, so now you will start your "soffritto": stir fry for 3 minutes and add the zucchini cube chops, keep cooking until they look light crispy.
3- Take an other pan, put 2 table spoon of olive oil, 1 clove of smashed garlic and skip the prawns at hot fire for 4/5 minutes.
4- Add the zucchini, keep cooking for 3 minutes and deglase with 3 table spoons of white wine; take of from fire, wait 30 sec., and keep aside.
5- As soon as the water is at the highest temperature (boiling strong) put 1 and a half table spoon of salt, meanwhile it's time to put in the pasta!! turn often and check the cooking state of pasta every 2/3 minutes:you don't want miss the “al dente “point!!
6- Add the sauce and skip all together, add pasta water if results too dry. Enjoy!!
