    Warning!..Extra Virgin Olive Oil is not just an olive oil.  

    It is surprising to note how much confusion there is still about the difference between the label Extra Virgin Olive and olive oil. Only the Extra Virgin olive Oil comes from healthy olives and is produced exclusively with mechanical methods in respect of tradition. On the other hand the olive oil, is mainly obtained by blending refined oils with virgin olive oil.
    How is Olivozzo made?  
    The producer picks by hand whole ripe olives (while they are changing colour from green to black) from the trees only.  
    The producer puts the olives in plastic boxes and brings them to the mill right away.  
    The producer stores the olives with care in a dark room, with umidity not more than 50/60%, the temperature must be around 12-16C°  
    The mill extracts the oil only through mechanical process within the next 24h (it is a must!)
    The extra virgin olive oil is decanted 2 times before it settles down in its final location, and only then it becomes Olivozzo.  
    The temperature of storage of the bottles is 14C° away from sunlight, heat and oxigen.
